Highpass filter on the Shield-EKG-EMG

hello people, when looking at the datasheets for the shield, i´ve been wondering how do you determine the highpass filters Fc is sufficient, because i´ve been looking at other Shields of this type and they all vary from the range of 0.16 - 10k HZ.
