Does Olimex have any plans to update the AM3352 SOM to use a chip in the AM437x range?

no, but we soon (waiting TI chips to be delivered in 8 weeks) will release:

1. industrial grade AM3352i-SOM with operating temperature -40+85C and AM3352i-SOM-512MB with SLC NAND Flash on it also in industrial grade

2. industrial grade AM3359i-SOM and AM3359i-SOM-512MB
