Using the Olimex Shield as an EMG

Hi, I recently purchased an Olimex EKG/EEG/EMG shield for my arduino uno board, and i was hoping to be able to set up an emg that controlled a servo. I am new to coding and only understand the basics. If someone could walk me through the basics of setting up the emg that would be fantastic.
