Good morning.
Are there any examples available to demonstrate the usage of an STMP1 Olinuxino connected to a MOD-LCD2.8RTP UEXT display?

Hello,

There aren't any guides. The hardware connection would be a bit tricky to do without extra hardware since the STMP157-OLinuXino-LIME2 has no UEXT connector. But you can use this adapter to get a UEXT or easier to use 0.1" step header:

But the software effort would be bigger since we don't have Linux demo for the display and you need to write SPI/I2C demo for Linux. It is popular display and touch controller so maybe there would be something ready available online tho.

If you need a display it would be much easier both hardware-wise and software-wise to just use one of the LCD displays supported by the software. You can get a display without touch or with CTS touch.

For the 10 inch display you might need separate power supply adapter since it draws 1W and more of power.
